Here's a quick recipe to freshen up your week!
Pick your strawberries locally if available and support small business!
Crust & Crumble:
6 tablespoons melted coconut oil (vegan butter would work, too)
1 1/2 cups almond flour (or GF flour of choice)
1 1/2 cups old fashioned oats
1/2 cup honey (or maple syrup for vegan)
1/4 cup coconut sugar (or favorite sweetener)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch of Salt
2 1/2 cups chopped strawberries
Juice of a wedge of a lemon
1 teaspoon of the flour you used above
1. Preheat oven to 350 degrees F
2. Coat 8x8 pan with coconut oil or vegan butter
3. Make crust & crumble: combine all ingredients above. It will be a little crumbly. Set aside a cup of the mixture. Press remaining mixture into the bottom of your pan for crust.
4. Time to laaaaayer. Sprinkle half of the strawberries on the crust. Squeeze lemon wedge and sprinkle teaspoon of flour overtop. Sprinkle the rest of the strawberries and then top with the rest of crumble.
5. Bake for 40-45 minutes!!
